When should I choose 50 micron and when 70 micron in this size?

For boneless meat, vegetables and ready-made portions, 50 micron is sufficient. If you are packing cuts with bones or sharp edges, or storing products for a long time, choose the 70 micron version.

Can I freeze the bags flat?

Yes. Lay the filled bag flat in the freezer so the contents freeze faster, then store the portions upright or stacked.
